Potato Cabbage Patty

Potato cabbage patty aka Aloo Tikki – A popular North Indian street food/snack made of crisp spiced potato.


Recipe

INGREDIENTS:

  • 4 Potatoes, halved then boiled and peeled

  • 1 cup Red cabbage, shredded

  • 1/4 chopped parsley leaves

  • 1/2 tsp Coriander powder

  • 1/2 tsp Cumin powder

  • 1/2 teaspoon Kashmiri chilli powder

  • 1/4 tsp Garam masala powder

  • 1 tsp Dried mango powder (amchur powder)

  • Salt and pepper to taste

  • 1 Onion, finely chopped

  • 1 jalapeno, chopped

  • 1-2 tablespoon canola oil for shallow frying

INSTRUCTIONS:

  1. Add all the ingredients (except oil) to a bowl and mash well to combine

  2. Divide the mixture into 8-10 equal-sized balls and press down with your palm to flatten them into a patty

  3. Place the flattened patty in a fridge for 1 hour

  4. Heat oil in a pan and shallow fry the patty till it turns golden brown. Note that the potato is already cooked, so all you are doing is letting the patty brown evenly.

  5. Serve hot with mint/coriander chutney and top with pickled cabbage
